El camarón

The whole menu is shrimp.

A shrimp curled head to tail, with its shell segments, legs, antennae and tail fan, printed as a block of colour slightly out of register with its outline.

The patty is shrimp, hand-chopped with a knife, never ground to paste. You can see the pieces. It goes on a griddled bun with cabbage, lime and salsa rosada. Six minutes from the time you order.

We deliver inside Uvita on orders over 9,000 colones. 1,500 colones flat, about twenty minutes. Past the town limits, come to the counter.

On the Costanera Sur in Uvita, on the sea side of the road, 300 m south of the bomba, at the Marino Ballena park entrance. There is no street address. There rarely is one in Costa Rica. Look for the painted sign.

Last order When the shrimp is gone, the griddle is off, and that is sometimes earlier.

September and October are quiet on this whole coast. We cut the hours, and some weeks we take a second day off. We post it on WhatsApp before we do it, so if you are driving down from Dominical, send a message first. Someone answers.

Whales pass here July to November, and again December to April. The town fills up, so does the counter, and six minutes turns into fifteen. Worth it either way.

Who is behind the counter.

We cooked at PLACEHOLDER: previous kitchen or town before this counter. The shrimp comes from PLACEHOLDER: confirm the boat, farm or town, and we chop it here every morning. When it runs out we turn the griddle off and put a note on the door. That happens. We would rather that than freeze it.
